Baumstein was a quarterback at the University of Mississippi in the mid-1930s, and played in the second-ever Orange Bowl in 1935.

Career Highlights:
In 1935, Baumstein helped lead Mississippi to a record of 9-2-0 and their first-ever bowl appearance. In the second-ever Orange Bowl, Catholic University jumped out to a 20-6 lead but then the Rebels made a comeback. They held Catholic without a first down in the second half as Herb rallied Ole Miss late in the game, throwing for a 24-yard pass for the final score of the contest. Unfortunately, the Rebels missed two extra points in the game and lost the game, 20-19. Herb finished the game with 3 complete passes in 12 attempts for 53 yards and the one touchdown. In his final two seasons with the Rebels, they had a combined record of 9-10-3.
